Roasted cauliflower is fantastic, plain and simple; needing so little attention from us, and coming out of the oven with a can't-resist texture, it's no wonder it gets so much love. But the next time you're grabbing a head from the grocer, check out these recipes too. They use just one head to make five distinct, easy, vegetarian meals — they're perfect for lunch for one, but of course you can scale any up to serve at dinner, take to a party… or to just eat extra of, we wouldn't blame you.
As for roasting a cauliflower, it's as simple as this. Trim the stems and leaves flush with the bottom of a whole head, and discard. Brush a 3-pound head with a tablespoon of olive oil, season it with salt and pepper, and roast it in a 450F degree oven on the bottom rack for 50 minutes.
