One of the Carlsons' most memorable retro meals featured a moulded salad that was supposed to look like a lobster, but came out looking like something else.

Jellied salads were a major fad of the 1960s. Pair that with an effort to bolster the Canadian seafood industry and you’ve got tonight’s star dish: the moulded lobster salad.

From the interesting-looking lobster mould to the taste and texture of the dish, this meal is sure to be memorable.

Ingredients

  • 2 tbsp gelatin powder
  • 1/4 cup cold water
  • 2 cups canned cooked flaked lobster
  • 1 cup green onion, finely sliced
  • 3/4 cup mayonnaise
  • 1/4 cup ketchup
  • 1 tbsp lemon juice
  • 1 tbsp horseradish
  • 1/2 tsp hot sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Special materials required: Lobster-shaped mould

Preparation

Add gelatin and cold water to a small pot, stir and let sit for 5 minutes. After, heat over medium heat until gelatin is melted. Remove from heat and set aside.

In a large bowl, mix the remaining ingredients together. Pour in melted gelatin and mix.

Pack mixture firmly into lobster mould and set in the refrigerator for at least 1 hour.

To remove, dip mould in warm water for 30 seconds. Flip mould onto a serving plate and tap until lobster comes out.
