We're hopefully past the days of strumming our chin and wondering "what to feed our vegetarian guests" and well into they days where we simply love, crave, revere! and revel in the flavour and texture of vegetables, grains, pulses, nuts and all of their tasty offshoots (oat milk, we see and love you, when we can find you). If you needed any further convincing that a meat-free meal can satisfy, then a meat-free menu like this should do it. Built around a mushroom and kale galette, any one of these recipes could become a favourite that you work into your meals regularly. (The actual challenge will be to try not to make butterscotch pudding cups routine.) As a five-piece feast beginning with a roasted pear and ricotta crostini, this complete menu, and your lucky guests, will definitely not 'miss the meat'.
