Homemade hummus: A super-simple, pantry staple star

Classic Hummus

Smooth, creamy, garlicky hummus is simply one of the best snacks out there. It’s loaded with fiber and protein, so it’s very satiating and is a really versatile ingredient that can be added to pastas, soups, or salads or enjoyed all on its own. And once you’ve got the basic recipe down, there are dozens of ways to dress it up.
Ingredients
- 1 (15-oz) can chickpeas, drained and rinsed (save some for serving, if desired)
- 3 garlic cloves, minced
- 2 tbsp fresh lemon juice
- 1 tbsp tahini paste
- Salt and freshly ground black pepper
- ¼ cup extra-virgin olive oil, plus more for serving
Preparation
In a food processor, combine the chickpeas, garlic, lemon juice, tahini, and salt and pepper. Process until the mixture begins to become smooth. With the motor running, slowly drizzle in the olive oil and process until the hummus is completely smooth and reaches your desired consistency.
Serve immediately with a drizzle of olive oil, some whole chickpeas, if desired, and salt and pepper, or store in the refrigerator for up to 5 days.
Mix it up:
Dill Pickle Hummus: Blend in ¼ cup chopped dill pickles, 2 tablespoons dill pickle brine (from the jar), and 2 tablespoons chopped fresh dill.
Roasted Beet Hummus: Blend in ½ cup chopped roasted beets.
Green Goddess Hummus: Blend in ¼ cup chopped fresh parsley, 2 tablespoons chopped fresh chives, and 2 tablespoons chopped fresh tarragon.
