If you've shied away from making Chicken or Eggplant Parmesan at home, we wouldn't blame you — layered dishes with multiple components can seem like a lot of work. But in these two recipes, you'll find one of the simplest tomato sauces you've ever come across, plus it yields a double batch so you can make both versions at once (perfect for if you're cooking for both omnivores and vegetarians). The eggplant version uses your oven to pre-cook crispy slices that won't get soggy from frying.
