Recipe: Black Bean Brownies

Ingredients
- 1 16 oz can black beans, rinsed and drained
- 12 medjool dates
- 3 eggs
- ⅓ cup extra virgin olive oil
- ¼ cup maple syrup
- ¼ cup cocoa powder
- ¼ cup whole wheat flour
- ½ tsp kosher salt
- 1 tsp vanilla extract
- ½ cup semisweet chocolate chips
Preparation
Preheat oven to 325F and line a 9x9" square baking pan with parchment paper. Remove pits from the dates and soak in warm water, set aside. Blend beans in mini chopper into a fine paste or mash with a masher. Drain dates and mash using mini chopper or masher.
Combine beans, dates and all other ingredients in a large bowl, mix to combine. Pour batter into prepared pan and bake for 30-35 minutes. Cool brownies entirely in pan, remove from pan and slice into 16 squares.
Servings: Makes about 16 brownies
