Recipe: Chuck Hughes' Roasted Bone Marrow with Spicy Antipasto

You may have tried bone marrow at a fancy restaurant, but it's actually easy enough to cook that you can make it at home! Here's chef and restauranteur Chuck Hughes' take on the dish, paired with his Vegetable Farmer’s Spicy Antipasto.
Ingredients
- Marrow bones (cut lengthwise)
- Chuck Hughes Vegetable Farmer’s Spicy Antipasto
- Chopped parsley (to taste)
- Sea salt
- Toasted baguette (to serve)
Preparation
Ask your local butcher to cut the bone marrow lengthwise.
Preheat oven to 425F. Roast bone marrow for 15 minutes, until it softens.
Remove from oven (careful bones are hot!) and top with Chuck Hughes Vegetable Farmer’s Spicy Antipasto, chopped parsley and sea salt. Serve with toasted baguette.
