Recipe: Middle Eastern-Style Marinade

Add some kick to your chicken and pork with this easy Middle Eastern-Style Marinade. It's great for the BBQ or for stovetop cooking, so you can enjoy it all year round.

Add some kick to your chicken and pork with this easy Middle Eastern-Style Marinade. It's great for the BBQ or for stovetop cooking, so you can enjoy it all year round. 

Ingredients

  • 1 cup buttermilk
  • 2 cloves garlic, roughly chopped
  • ½ tsp sumac
  • ½ tsp cumin
  • ½ tsp caraway seeds
  • ½ tsp cinnamon
  • ½ tsp cayenne pepper

Preparation

This marinade is great with chicken and pork. Add garlic and spices to a mortar and pestle and crush until smooth. Add to a bowl or zipper bag. Add buttermilk and protein. If making kebabs, cut pork or protein into 1 or 2 inch cubes. Mix or massage protein into marinade.

Assemble skewers and place back into bag with marinade. Marinate for 1 hour of overnight. Remove skewers from fridge 20 minutes before cooking. Heat a BBQ, grill pan or cast iron pan over medium high heat. Shake off excess marinade and add skewers to heat.

When meat is cooked through remove from heat. Serve with a salad and yogurt sprinkled with sumac as a dipping sauce.
