Recipe: Paleo Pancakes
If you’ve never eaten like a caveman it’s time to start

Ingredients
- 2 cups fresh raspberries
- Juice of half an orange
- 2 bananas, divided
- 2 whole eggs
- 2 egg whites
- 4 tbsp coconut flour
- ¼ tsp cinnamon
- ¼ tsp ginger
- ¼ cup pecans, chopped
- 2 tsp coconut oil for frying
- Fresh berries and dried coconut for serving
Preparation
For sauce:
In a sauce-pot on medium high, heat 2 cups raspberries and orange juice for 10-12 minutes until thickened. Feel free to gently mash the berries. Strain through a sieve making sure to press firmly so all the juice comes out.
For pancakes:
Mash 1 banana in a large mixing bowl. Add 2 whole eggs and whisk until combined. Stir flour, and spices into wet mixture. In a separate bowl beat egg whites until firm. Gently fold into batter along with pecans, and your second banana, sliced into thin rounds.
Add 2 tsp coconut oil to a non stick pan over medium low heat. Swirl around to coat the pan. Add 4 ladles of batter to the pan, this should use up all of the batter. Cook a few minutes per side, paying close attention as coconut flour can quickly burn. Flip over and cook until golden brown. Serve with your sauce, fresh berries and dried coconut, enjoy!
