Steven’s Mom, Irene shared her meatloaf recipe that Steven ate as a kid growing up. This jelly-roll-style dinner is so retro, it’s from a TV guide from the 1970s! And in true vintage dinner party-style, it’s got a filling of mashed potatoes and boiled eggs, and to finish it all of, it’s topped with a ‘gravy’ of mayo and milk. Serve with string beans and carrots. We promise it’s delicious and it’ll take you right back to the '70s — no gelatin salads required.

Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • ½ cup dried breadcrumbs
  • 1 egg, beat slightly with fork
  • ¾ tsp salt
  • 2 to 3 cups mashed potatoes (does not have to be exact)
  • 2 large eggs, hard boiled, 10 min.
  • ⅓ to ½ cup mayonnaise or tangy mayonnaise (½ cup if using 3 cups of mashed potatoes, ⅓ cup if using 2 cups of mashed potatoes)
  • ⅓ cup Parmesan cheese, grated
  • ¼ to ⅓ cup celery, very finely chopped
  • 1 green onion, finely chopped
  • Salt & pepper to taste
  • Cooking spray

Sauce:

  • 1 cup mayonnaise
  • ⅓ cup whole milk
  • 1 green onion, finely chopped

Preparation

Combine meat, crumbs, egg and salt — mix well. On wax paper, pat meat mixture evenly into a 12" x 14" rectangle. In a bowl combine mashed potatoes, finely chopped hard-boiled eggs, mayonnaise, Parmesan cheese, celery and green onion. Mix and season to taste with salt and pepper.

Spread potato mixture evenly over meat and roll up like a jelly roll, starting at narrower end.

Chill several hours or overnight in fridge. Slice roll into 10 slices, approximately 1 ¼" for each slice. Coat large sheet pan with cooking spray, place slices on top and bake in oven at 350F for 25 to 30 minutes.

For sauce, combine all ingredients and heat over low temperature in a saucepan. Serve your meatloaf with cooked veggies of your choice. Pour sauce over the veggies and meat loaf, enjoy!

Tips: To make a perfect hard-boiled egg place the whole raw egg(s) in cold water with some vinegar and salt and bring to a boil. As soon as the water boils, turn off the heat and cover the pot for 10 minutes. To cool hard boiled eggs down quickly, run cold water over them.
