Recipe: Yorkshire Pudding

A British favourite, these succulent Yorkshire puddings are the perfect accompaniment to any holiday feast.

Ingredients

  • 1 cup all-purpose flour
  • ¾ cup whole milk
  • 4 large eggs
  • 1 tbsp water
  • ½ tsp kosher salt
  • ½ cup clarified butter, vegetable oil or pan drippings

Preparation

For batter: 

Whisk together flour, milk, water, eggs and salt until smooth. Set batter aside and rest for at least 30 minutes. For best results, mix the day before, rest the batter overnight in the refrigerator and allow batter to come to room temperature before baking.

For baking:

Preheat oven to 450F. Divide clarified butter, vegetable oil or pan drippings evenly in a 12 cup muffin tin on a baking sheet. Place pan in oven until pan is smoking hot, approximately 10 minutes. Remove pan from oven and divide batter evenly between muffin cups, filling cups about halfway. Immediately return pan to the oven and bake for 15-18 minutes, until puddings are tall, golden brown and crispy. Serve immediately, or cool fully and freeze.
