Made from crushed graham crackers and rich, fluffy cream cheese these teeny, candy-coated cheesecakes are so creamy and indulgent, you won’t be able to stop at just one. The ultimate finger food — perfect for parties, birthdays or as a decadent midnight treat to satisfy that lingering sweet tooth!

Ingredients

  • 20 graham crackers, crushed
  • 2 tbsp sugar
  • ⅔ cup unsalted butter, melted
  • 16 oz cream cheese
  • 1 ¼ cups condensed milk
  • ¼ cup lemon juice
  • 1 tsp vanilla extract
  • Candy melt
  • Sprinkles

Combine the crushed graham crackers, sugar, and melted butter in a bowl. Use a spoon to mix it all together.

Add the cream cheese to the mixing bowl. Mix on high while gradually adding the condensed milk. Do the same with the lemon juice, and then the vanilla extract. Mix thoroughly until it’s fully blended and creamy.

Line the baking dish with parchment paper. Pour the crushed graham crackers into the bottom of the dish and pat down firmly.

Pour the mixture into the dish (are you drooling yet?) Use a spatula to spread it out evenly to all corners.

Stick it all in the fridge for 2-3 hours. Once solidified, cut into mini triangles. Stick the tip of a popsicle stick into each triangle.

Grab your melted candy! Take each cheesecake bite and dip half of it into the candy. Toss some sprinkles on there and lay them out onto a parchment-lined cookie sheet to harden.

Once the candy coating is firm, lay them all out on a plate, pop some champagne, and try one! Or three….or five…
