Lyed Corn Berry Parfait

Lyed corn is an excellent source of calcium.

Lyed corn is a traditional Haudenosaunee white corn that goes through a process called nixtamalization. The corn is boiled with hard wood ash, which creates an alkaline solution that makes the corn easier to digest and boosts the corn's calcium content.

Ingredients: 

2 ½ cup lyed corn 

1 pint of blueberries 

1 pint raspberries 

1 container strawberries chopped 

½ cup pumpkin seeds 

1 cup maple syrup 

Fresh mint 

Mix all ingredients in a bowl and chill.  Garnish with mint when serving.
