Candice started baking after she moved away for university and missed indulging in her family's traditional Goan Christmas sweets trays. Now, baking is among several hobbies she uses to unwind from her workday. Candice also enjoys photography, especially capturing moments with her three children and her husband of 22 years. She rounds out her creative pursuits with music as the conductor of her local choir and as an avid patron of opera.
When did you start baking? Cake decorating is what got me into baking beyond treats at Christmas. Growing up, my mom would make and decorate all our birthday cakes. She made my oldest's birthday cakes for the first two years but was out of town for Rei's third birthday. I decided to give it a go. When I look back now at those first cakes, I cringe just a tiny bit. But, I can't regret it because it ignited a passion for baking that gives me an outlet for my creativity.
What's your signature bake? My apple pie is always in demand. One isn't enough for our family gatherings.
Why do you think you can be Canada's Best Amateur Baker? I could be Canada's Star Baker because I love learning about the art and science of baking and I enjoy elevating familiar flavours in new ways. I also put something personal into every bake whether it's a memory, a taste or something that reminds me of friends and family.
