Cap-Pelé, N.B., is a small town, but it's known as the smoked herring capital of the world.

Making smoked herring is an enduring tradition in New Brunswick. Mario Cormier, president of Cap-Pelé Herring Export, tells us how what started with his ancestors gradually became an industry. The technique remains largely in tact — from manual labour to the open flame that smokes the fish to its much loved flavour.

Today, 20 million pounds of smoked herring per year are exported from New Brunswick — largely to Haiti and the Dominican Republic.
